Nepali Style Mushroom Curry Recipe!!

Mushroom cooked in a Nepali way is my favorite! There are so many ways to make mushrooms but nothing can beat a delicious mushroom curry made in traditional Nepali style. Other versions of mushroom I like is the mushroom coconut curry (recipe here). Back home we used to get so many different kinds of mushrooms! Bhudke Mushrooms, Pudke Mushrooms you name it =)) Ah funny names! Anyways, here in the United States, I find that Oyster Mushrooms being the closest to what we get back home. Also, taste wise it is very similar to what my mother used to make. Without any further discussions, here I present you, the yummy Mushroom Curry made in Nepali Style :)

Things you will need:

  • Mushroom (any kind 16 oz or 1 packet, washed and cleaned)
  • Oil (4 table spoons)
  • Cumin seeds (1 tea spoon)
  • Fenugreek seeds (1 tea spoon)
  • Onion (1 medium sized, finely sliced)
  • Salt (According to taste)
  • Turmeric powder (1 tea spoon)
  • Timur powder (1 table spoon)
  • Ginger (1 table spoon)
  • Garlic cloves (4-5)
  • Tomatoes (2 medium sized, halved)
  • Serrano pepper or green chilies (2)
  • Cumin-Coriander powder (1 and 1/2 table spoons)
  • Meat Masala (1 table spoon)
  • Water (1 cup)
Directions:
  1. On a blender, add tomatoes, green chilies, cumin-coriander powder, ginger and garlic. Make a paste and put it aside.
  2. Heat oil and fry cumin and fenugreek seeds until brownish black.
  3. Add onion and fry until golden brown.
  4. Add mixture from step 1 and stir. Let everything shimmer for 2 minutes.
  5. Add mushroom, timur powder, meat masala, salt and turmeric powder. Gently stir everything.
  6. Cover and cook for 5 minutes on a medium heat and make sure to gently stir 1-2 times.
  7. Add water and cook without covering for another 3-4 minutes. Stir gently. Check the consistency and  see if you are satisfied.
  8. Done!! Enjoy with rice, chapati or bread :x
